chore: replace arduino/setup-task with go-task/setup-task - #3892

arduino/setup-task is an unofficial fork; go-task/setup-task is the official action maintained by the go-task project. Bump to the latest release (v2.1.0) at the same time. Replaces all three occurrences across ci.yml (×2) and update-models.yml (×1).

Replace the unofficial
arduino/setup-taskaction with the officialgo-task/setup-taskaction. Bumps the pinned version from v2.0.0 to the latest release, v2.1.0 (01a4adf9db2d14c1de7a560f09170b6e0df736aa).Covers all three occurrences:
.github/workflows/ci.yml(×2) and.github/workflows/update-models.yml(×1). The secondci.ymloccurrence landed in main after the previous PR #3882 was opened.Testing:
scripts/workflow-lint.shpasses (SHA-pin, concurrency, and broken-payload checks all OK).
